Day 1 Of Healthier Living

So today marks the first of many to come of eating better and getting more exercise.  I'm wondering how today will go without my 3 cokes (eek!) But so good so far!  I'll be posting updates on my progress and also some yummy healthy recipes.  I'm excited to share a fruit/vegetable smoothie with you today.  If you're ever in the mood for new things, just pinterest and you'll be sure to find what you're looking for.





In a blender combine…

1 banana (I used about a 1/2 cup)
1/2 cup peaches or mango (frozen is fine)
a couple of handfuls of spinach (about 2 cups)
water (enough to mix it all together)
ice (if desired)

Put all ingredients in the blender and enjoy!! I promise you will not be able to taste the spinach. If you use the lighter colored fruits you will get the nice green smoothie. If you don’t have those, strawberries or blueberries are perfectly fine. The color just won’t be the same. Important note: Do not substitute milk for water. It does not combine well with the fruit and can cause some digestion issues.

Baked Eggs with Bacon & Spinach

Okay, we've been trying to cut back and eat healthier. So I found this new recipe on pinterest (of course!) And just had to try it for myself!  I'm not the biggest fan of spinach, but this recipe just jumped out at me...maybe because anything with bacon just has to be yummy!  I made these last night and they lived up to my expectations.  You should definitely try it for yourself!



BAKED EGGS WITH BACON AND SPINACH
Serves 2, but this can be split in half easily to make them in small individual ramekins.
  • 4 whole eggs
  • 3-4 slices thick-cut bacon, cooked and chopped
  • 1/2 cup loosely packed spinach
  • 2 Tbsp cream
  • 2 Tbsp butter, melted
  • salt and pepper to taste
  • 1/4 tsp thyme
Preheat oven to 375.  Spray an oven-safe ramekin with nonstick spray.  Pour cream and butter into the bottom of the dish.  Layer the spinach and bacon on top.  Gently crack each egg onto a fourth of the spinach/bacon.  Sprinkle with salt, pepper, and thyme.  Bake at 375 for 15-20 minutes until the yolks are where you like them (I know a LOT of people like them runny, and by all means…go for it!  Just keep in mind it will need to bake longer if you want/need them to be hard).  Serve hot!

I didn't have any thyme in my kitchen, so I just added salt and pepper and my husband added cayenne pepper to his.  He's been on a cayenne pepper kick here lately :)

Homemade with Love

Valentines day is quickly approaching and if you're like me and you don't like the ordinary Valentines then why not create some at home that are cute and easy!  I just printed out the hearts onto cardstock and then had Braden write his name and taped them to a glow bracelet! And viola! Easy homemade Valentines that will be a favorite among his friends!
